Hi there!
You've been talking to the right people, because you already have all the answers. The turbo N-engined Minis are to be avoided as far as possible, so the 2012 Cooper S is not the best choice in your list. It will also be a decade old by now, and modern Minis don't often age well...
Next up, the Polo GTI. The mechatronics unit (and clutch packs) of its dry-clutch 7-speed DSG is a known failure point, so only consider one if your have mechanical breakdown insurance that also covers the mechatronics unit (many dont). Pity they don't make the Polo GTI in manual form anymore - that car was a blast!
Finally, the 2017/18 Cooper S: This is the preferable choice in this trio. The BMW B48 engine is proving quite solid thus far (just remember to change the oil and filter every 15 000 km, regardless of what the service indicator says). Its other mechanical systems are similarly robust, and as you said, it's pretty quick. It also burps nicely on overrun.
