We entered your search criteria into our listing filters, and came up with a bunch of viable options. Seeing as you don't like small cars, we moved up a size category, and filtered by sedan, SUV, and hatchback body styles.
The first option to look really viable in your context would be an Audi A3 sedan (~2015/2016), with a 1.4-litre engine and manual transmission: No S-Tronic (automatic) in this case, because those age badly; and with a 1.4TFSI engine, which is capable of excellent fuel economy as well. It's perfect for long trips, but not so big that it becomes difficult to handle in town.
The next option would be a used BMW X3 (also around 2015-vintage): The 2.0 diesel engine is reliable and very economical, and it will be a great companion on your long-distance trips without becoming cumbersome in traffic. You could also get a Ford Focus 1.0T EcoBoost in this price range, which will again serve your needs quite well; or a Kia Sportage 2.0 diesel, which is well-proven, economical and cheap to run.
