Regarding the profitability of using a car solely for Uber duties, it's impossible for us to say whether it would be worth your while - there are many other variables at play here as well, including the number of other Uber drivers around the area in which you would operate, as well as the demand for such a service in that area.
However, generally speaking, there are new drivers joining the Uber enterprise on a daily basis, so that probably means that the business is still expanding and that there's increasing demand for this service.
Uber does specify that your car has to be a sedan, however, so make sure that the Polo you consider is a sedan. Other popular choices are the Hyundai Accent and Corolla Quest. If you're averse to changing gears and operating a clutch, an automatic will serve you well, but a manual transmission car will still use less fuel and be cheaper to maintain.
